Zesty cupcakes for a fresh spring day

The sun is shining, the sky is blue, friendly daffodils are waving in the fresh breeze…

I won’t get all poetic, but it’s been a beautiful day down here in Devon. When I got home the sun was streaming into my living room and I was inspired to bake some cakes to test out my new icing nozzle (Wilton 1M for those who know what I’m on about). I made a very basic lemon sponge and topped it with a lemon cream cheese icing – I generally prefer cream cheese icing to buttercream as it’s less sickly. I’m still definitely a novice at icing, but I think that this is a fair attempt:

I’m going to keep practising – let me know if you have any good tips or know of any helpful how-to videos.
