Whilst browsing for recipes, I came across this recipe for cinnamon pull-apart bread. I’ve tried making cinnamon and raisin monkey bread before with mixed results – I tend to get distracted while it’s in the oven and let the glaze burn. However, this looked tempting enough for me to give it a go. I had good intentions of getting up early enough to have this ready for brunch. Needless to say, it didn’t happen but now I have a cinnamon loaf ready to go with a cosy cup of tea this afternoon.
After the dough has risen, it’s rolled out and sprinkled with cinnamon sugar. After that it is cut into slices and layered.
The layered slices are cut into little stacks, which are then arranged in the loaf tin. The dough squares are left to rise, then baked in the oven for about half an hour.
When it comes out of the oven, it should look like this. Try to resist diving straight in, I’ve learnt the hard way that sugar toppings have to cool down before you can taste them 🙂
