Earl Grey muffins
Lately I’ve had the post-breakfast munchies. You know, those moments when you’ve had a lie-in and a lovely leisurely breakfast but you still need a little morsel more to eat? You’ve taken your time over your bowl of cereal and slowly sipped your coffee, but it feels like something is missing. If only the cupboards were filled with delicious breakfast breads, pastries or muffins…
I went on the hunt for a recipe that would allow me to try out my new silicon cupcake cases and would be healthy enough to eat at breakfast – I came across the recipe for these Earl Grey and poppy seed muffins and decided to give it a try. These are really good breakfast muffins, not too heavy and not too sweet. The original recipe suggests a marmalade glaze, or even spreading marmalade straight onto the muffins. I had no marmalade, but I can testify that these muffins are perfectly good on their own. The batch is quite large, so some of these muffins may even make it as far as my freezer to guard against any future instances of the post-breakfast munchies. We’ll see…
